HEAD OF FOOD & BEVERAGE

Main Purpose

  • Responsible for the Food and Beverage (F&B) provision of all City Cruises functions and charter sailings.
  • To oversee all compliance with regulatory bodies (LPHA) and manage the relationships with licencing authorities in regards to the procedures to obtain “TENS” applications and any other responsibilities with alcohol licencing.
  • Ensure that all functions are staffed accordingly with the right levels.
  • Manage the overall daily hygiene and work practices in both service and food production at head office.
  • Evaluate overall performance and customer service levels for all F&B employees.
  • Achieve budgeted sales target in regards to product margins and revenues.
  • Manage employees’ budgets in line with company targets.
  • Develop regular employee incentive plans to increase revenue and customer satisfaction.

Principal Responsibilities

  • Forecast F&B employees, stock and inventory requirements for the various operating seasons for all functions.
  • Recruit and manage training of all employees relating to functions. 
  • Manage F&B employees, stock and inventory in a cost effective manner that ensures resources are efficiently allocated.
  • Maintain record of transactions and provide management reports. Work with the Accounting / Finance Department employees to develop useful records.
  • Coordinate with the Reservations Department on bookings and functions and ensure adequate provision to meet customer requirements.
  • Forecast seasonal staffing needs for functions, and assist the HR Department in determining employees’ salary budget, core employees’ levels, projecting staffing requirements to minimise agency usage.
  • Work with Senior Management in relevant aspects of creating the operating and capital budgets.
  • Ensure all functions equipment is operational and defects reported to operations.
  • Lead the F&B department in the long-term financial and strategic planning.
  • Work with management and employees in the creation and design of new menus, programs, concepts and presentations to provide unique dining experiences for guests while driving revenue.
  • Implement an inventory control system to ensure food and beverage inventory levels are steady. The system elements will include Purchase Requisitions, Purchase Orders, and procedures for receiving goods, recording amounts used, and wastage of stock.
  • Use Food & Beverage inventory forecast to project the cost of required inventory on a seasonal basis.
  • Work with the Procurement Manager to determine which suppliers to use.
  • Implement and supervise appropriate ongoing training programme for food handlers.
  • Implement a system of performance monitoring, and highlight areas for improvement in F&B delivery, produce recommendations for improvements analysing costs and benefits.
  • Set individual KPIs for the department and measure performance against the objectives
  • Carry out annual employees performance appraisals
  • Control adherence to company contracts, policies and procedures and any related disciplinary matters
  • Ensures that all F&B employees have all of the certification required for their positions.
  • Work with the HR Department on hiring and training programmes for all F&B employees
  • Provides regular feedback to all F&B employees, on business performance, new initiatives, and training opportunities. Encourage employee feedback.

Educational Level/Qualifications

Desirable:

  • Educated to A Level or equivalent

Experience/Knowledge

Required:

  • Experience in a variety of noteworthy up-scale restaurants and higher volume catering establishments
  • Experience in conference and banqueting
  • At least three year’s previous General Manager experience in charge of a restaurant(s) and ideally multi-faceted catering establishment(s)

Captains and Mates - Career Opportunity for BML holders/trainees

City Cruises Plc is actively seeking Captains and Mates to join our team, piloting our fabulous RiverLiners as well as our extensive fleet of more traditional River Thames cruisers and work boats. You must, however, hold a valid Boatmasters licence.

Marine engineer/diesel fitter

Working on maintaining our fleet, experience on working on marinised diesel systems is essential.

Cabin crew

Providing a high standard of service to the public on board our RiverLiners, previous bar/catering service will be a distinct advantage for applicants. (Please note: these positions involve retailing alcoholic beverages)

Kitchen porter

Based at either our galley kitchen or our restaurant ship. Working within the kitchen team, the role will involve maintaining a clean workplace, clearing surfaces, washing up and some basic food preparation. A CIEH foundation certificate in food hygiene (or equivalent) is an essential pre-requisite for this role.
